Ingredients

  • Potatoes (cut into cubes) – 1 cup
  • Beans (cut into pieces) – 1 cup
  • Carrots (cut into pieces) – 1 cup
  • Finely chopped onions – 1/2 cup
  • Minced garlic – 1/4 cup
  • Green chilies (slit) – 4-5 pieces
  • Soybean oil – 2/4 cup
  • Turmeric powder – 1/4 tablespoon
  • Salt to taste

Instructions

Preparation:

Potatoes: First, remove the skin from the potatoes and then cut them into small cubes. You can adjust the size of the potato cubes according to your preference.

After cutting the potatoes, wash them thoroughly in water. Then, take a bowl filled with water and keep the potato cubes soaked in it. (Soaking the potatoes in water prevents them from turning black.)

Beans: Wash the beans thoroughly in water and then cut them into pieces similar in size to the potato cubes. After cutting, place the bean pieces in a separate bowl.

Carrots: Wash the carrots in water and then cut them into pieces similar in size to the potato and bean cubes. After cutting, place the carrot pieces in a separate bowl.

Onions: Peel the skin of the onions and finely chop them. Place the chopped onions in a bowl.

Garlic: Remove the skin of the garlic and then mince it finely. Place the minced garlic in a bowl.

Green Chilies: Slit the green chilies lengthwise from the middle, dividing them into two halves.

Cooking Method:

Step 1: Place a pan on the stove and heat it. Add oil to the pan and let it warm up.

Step 2: Once the oil is mildly hot, add the chopped onions to it and sauté them.

Step 3: To ensure the onions are properly cooked, cover the pan with a lid for one minute. After one minute, remove the lid and add the minced garlic to the pan. Sauté the mixture for another minute.

Step 4: Next, add the potato cubes to the pan and mix them well. Cover the pan with the lid and let the potatoes cook for two minutes.

Step 5: After two minutes, remove the lid, and add turmeric powder and salt to taste. Mix all the ingredients thoroughly.

Step 6: Now, add the carrot pieces to the pan and mix them well. Cover the pan again with the lid and let all the vegetables cook for five minutes. (Remember to open the lid and stir the vegetables every two minutes before covering it again.)

Step 7: After five minutes, remove the lid and add the bean pieces to the pan. Mix all the ingredients thoroughly.

Cover the pan again with the lid and continue cooking until the potatoes, carrots, and beans are half-cooked. (Keep the heat on medium to low throughout the cooking process to ensure proper cooking.)

Step 8: Once the potatoes, carrots, and beans are half-cooked, add the slit green chilies and cover the pan with the lid again. Continue cooking until all the vegetables are completely cooked.

Step 9: Once the vegetables are cooked, remove the pan from the stove and let it cool for two minutes. Then, it’s ready to be served.

Enjoy your delicious Aloo Beans Stir-Fry! Serve it hot as a side dish with rice or any bread of your choice. The blend of flavors and the goodness of nutritious vegetables make it a perfect addition to your meal.
